My First Batch of Gluten Free Goodies

I recently found out I am gluten intolerant. I also have issues with lactose and probably even casein but that is still to be determined. I thought that meant the end of cookies, cakes, pancakes, and cupcakes. I've since done some online research and discovered that there are some wonderful cookbooks and dairy free/gluten free foods don't have to taste terrible. I have also received lots of helpful information from friends with similar food intolerances to mine and I thank them very much for sharing their knowledge with me.

Today I made my first batch of dairy free/gluten free baked goods and yes, they are as delicious as they look. I cooked them a bit too long and they crumbled when I took a bite but I can just shorten the baking time.

After buying a ready made gluten free apple pie that tasted like cement with apples in it I was really discouraged. I still decided to buy a cookie mix to try it out and added eggs and vegan Becel margarine. I made some with chocolate chips and some with sugar and cinnamon. They taste so good. The texture is a bit different but I can totally live with that. Now I can't wait to try cakes and other pastries. If only I could enjoy a glass of milk with these yummy treats but for now I'm going to have to settle for a glass of water.

  2. Wow, those look so yummy! Good for you for taking control of your health and doing all this difficult research. And I'm so glad that you're finding that you can still eat some delicious treats as well :)
